Stainless steel is a steel (primary element Fe, iron) with nickel and chrome added for stain resistance. Good stuff. Monel is a copper-nickel alloy, typically about 70% nickel. Good stuff. If I had to guess, I'd say the stainless steel had a higher electrical resistance, all things being equal, but I've never tested for that.
