What does work well in this situation is a variable voltage dial thingy made to vary the heat of high wattage soldering irons. You can find them at Radio Shack or places that sell stained glass supplies. They plug into a wall socket like a wall wart charger and the iron or device needing regulation plugs into that. turn the dial to vary the current. I used to build slot car chassis from piano wire and brass or EDM cut spring steel. 4 of my chassis have been been used by US national champions to win those championships. We used high wattage irons and we never had a problem. We used light dimmers for awhile and they quickly would fail but thankfully without catastrophic results. Ed is right. Keep the light dimmers for dimming lights. They aren't made for high current situations. I know there are better ways than this such as Variacs or my favorite my old childhood Lionel train transformer but this is for those cheapskates among us.
