I zoom launched both stabs off of a newer model....It startled me and I
applied full flaps to slow it down....The model roller inverted and was
completely steerable with the ailerons and I flew it around in big circles
and it landed inverted with "not" one scratch...

If for some reason it were possible to skip every method of balancing a sailplane (pretty unlikely since you all read the balancing articles that have been published in RCSD over the past 20+ years)...but if it were to happen, do what Brian did....
rebalance your model in the air!

Flying wings use lead to limit their pitching, they balance around 10% of root chord, and its why they fly with reflex (up elevator)...generally.

So if you find that your model is unbalanced and you can't seem to control it, simply eject your stabs, flip inverted, and fly it down.....

That's assuming that you have the thumbs to control a model sailplane well enough inverted to bring it down and landing softly...using the flaps as elevons.
