no, there is running one SMS service/gateway on the xmpp server

sending all the SMS messages on behalf of the users. So the sender
will be
always the same number.
That's implementation dependent. For example, SAPO SMS gateway gives
one SMS number per JID. You can reply to the SMSs and they will show
up in the XMPP client.
