After more than 6 weeks I confirm that the box is stable if I don't use eth0 and eth1. As I keep this machine up-to-date with the Ubuntu repositories (it's running Lucid) it's still possible that this is due to improved software stability rather than my use of different physical ports. I'm therefore still very much interested in data points other than my own.
