As already said, I am pretty sure as well that you get garbage because 
there is a serial speed mismatch.

Check the Syslinux configuration file and either
- change it in Syslinux (you will need to change it once for Syslinux 
itself -- SERIAL option -- and once for the Linux kernel -- APPEND option)
- or set the speed of the net6501 accordingly

(Most of the time default speed is 9600, so just setting your Soekris 
board to that speed would be a good guess)

I have not tested Squeeze myself, but I am running happily Debian Wheezy 
on mine (Installed through PXE though as I found this easier than 
fiddling with USB keys)
