You can SHIFT+ Click them back on in the transform menu there is a little color referenced button next to each transforms (x,y,z) axisis
it is possible to accidentally turn them off by double clicking on one of the axisis on the transformation gizmo. you can also bring them all back by double clicking in the center of the transformation gizmo, but this can be tricky.
