Often doing any material parameter changes when render region is actively
rendering also crashes, nevermind changing whole materials! The 'official'
way is to pause/update on mouse up or click. Eg click on viewport to pause
render region , do material change then restart region

There may be some cases it works perfectly fine but been bitten too many
times to not work this way.
