Sounds alot like my 550 did when I first got the bike. The pilot jets were plugged. After I cracked the throttle, it would run at 3k for 20 seconds before dying. I think the 750's used an accelerator pump, which the 550's don't, so I may be off on your problem. First thing I'd try is spraying carb cleaner in the jets from the bottom with the bowl off.
