As you can figure it depends of the final use of the equipment... So I will tell you 
how we do it on some cases"
a) mail server (using plain sendmail)
s0 / (that includes / and /usr, these partitions barely grows with patching and you 
must enforce to install on /opt/sfw)
s1 swap (2 or 3
of course there is a link on /usr/local/ -> /opt/sfw/ . Size 2.4 GB (it supports 
Developer custom install)
s3 /var (alone, at least 3 * RAM Installed, to support crash files and the mail... of 
course it depends of  mailbox size to serve)
s4 /opt (alone, how big it depends we use 4GB).

s5 or s6 whole space to be used with soft partitions... so it will let you manage 
partitions size easier..

s7 10MB metadb

b) DB Server
s0 ident
s1 swap (Oracle says at least 2.5 times installed RAM)
s3 /var (2 * RAM or 1.8 GB, large enough to support crash and yearly logs)
s4 /opt (it depends)

s5 or s6 iden, of course is better to use other disks and /or SAN

s7 10MB metadb
