I was actually able to accomplish (althought not pretty) what I wanted using
a regex transformer.
<entity name="item"
transformer="RegexTransformer"
query="select *, 'valueA, valueB' values from items">
<field column="myMultiValueField" sourceColName="values" splitBy=","/>
</entity>
