I'm sorry, but I have a hard time following the whole argument - there has to be a way to write the code clearly and readable but still avoid undefined behaviour (and not paper over it by disabling some optimizations in the current compiler). Can we just copy it to a temporary uint16_t array? How big are these boot blocks? A kilobyte?
