View | Preferences | File Types

One important note: this only sets the default type for each extension for your 
SJ client. SJ, by
default, will set the file type of each file to what you specify in this 
screen. This happens when
you add a file. Once a file is in the system as, say, a binary file, right now 
there is no way to
change that files file type. You'll have to remove and re-add a file if you 
want to change it's
text/binary type in SJ.
