Is it better to be pulling stuff straight out of git, or is it better to be using some combination of the 0.6/rawhide RPM nightly builds at miroslav.suchy.cz?

Nightly builds.
Sometimes in master are commits which can broke whole functionality. When developer is happy with changes as whole (s)he should tag the package, which become instantly available in nighlty builds.

I must admit that sometimes developer forgot to tag package. You can discover that by running:
 rel-eng/git-untagged-commits.pl
which gives you list of untagged packages with commits to master.
But such packages are usually tagged by somebody else within one week time frame.

If you are hardcore and want to operate directly on git you can follow:
https://fedorahosted.org/spacewalk/wiki/DevelopmentWorkstationSetup
While some developers have this setup, I personally do not like it and use nighlty+custom package rebuilt using "make test-rpm".

Straight from the horse's mouth. Thanks for the advice. :)
