Thank you for that information. I am seeing the older servers now registered 
with the Spacewalk server. 

However, after registering one of the new servers, 'yum update' from one of the 
registered servers is still wanting to go to the outside world to do the 
updates rather than contacting the Spacewalk server for them.

Am I missing a step somewhere?

Yes, it is possible.

Just install client packages: 
https://fedorahosted.org/spacewalk/wiki/RegisteringClients
and run:
  rhn_register
