3 steps to address this issue

1) remove evolution from the channel your host is assigned to, or gets assigned 
to (or move to a separate channel)

2) add exclusion rule when you do package import/sync via spacewalk-repo-sync 
command. 
Example "spacewalk-repo-sync -e evolution --channel channel-name --url 
http://myurl/updated-packages --type yum

3) like Jan mentioned below, add an exclusion in kickstart file -evolution

In Kickstart profile -> Software -> Package groups you should be able to add:

-evolution

This would exclude the package "evolution". Problem here might be evolution 
package will be required by some other installed package, but you will see.
