Answering my own question here:

It seems that a hyphen starts a list of exclusions, so it is only needed once:
-eclipse*,xorg*,libreoffice*,evolution*,gnome*,kde*,kernel-doc*,kernel-debug*

This filter works and excludes packages such as eclipse, gnome and kernel-doc.
