You may want to change that to

adding a "<" immediately before the asterisk (that's the pattern I see in
my spam).

The one and only ham caught here by the first rule was addressed to
[EMAIL PROTECTED] (a simple typo, where the actual email address was
[EMAIL PROTECTED] )
