I am running Postfix with SA, Procmail, and Webmin on Red Hat 8.0. I want to move away from RH and am soliciting opinions. I figure that for me, I have 3 viable choices: FreeBSD, Debian, and Slackware. I want a free OS so

I can't compare because I have never tested Debian and Slackware (tried RH and SuSE though), but my OS of choice is BSD - both Open and Free. We use FreeBSD for web and mail (Postfix) servers and they have proven reliable, easy to maintain and with prompt security fixes.
The FreeBSD ports system is excellent for maintaining updates, I doubt if there is a better one for that.
The learning curve, yes it's there but some reading (the Handbook) and checking mailing lists (freebsd-questions) should get you started in a week or so as somebody else here suggested. It's not terribly different.
Finally, there are currently two branches with FBSD, one for the daring (-current) and one for the rest of us (-stable or -release). I suggest you stick with -release at least initially.
