Still no joy. The spam being found is not being tagged in the subject line. Any help would be appreciated.
1) I'd strongly advise that you never edit files in /usr/share/spamassassin. Always add your site-specific custom settings to /etc/mail/spamassassin/local.cf unless you understand the implications. Any duplicate settings will always be over-ridden with whatever is in local.cf, so in general there's never a need to edit the /usr/share files.
2) make sure your config is sane.. run: spamassassin --lint.
3) what happens when you simply send mail through SA on the command line?
spamassassin <sample-spam.txt
