I asked a similar question yesterday, and the answer is simple, when you know how :)
 
Create a new imap mailbox on your server and then copy all those emails to that account, you can then use the --mbox option of sa-learn.

For SA-Learn, I assume u need the emails to be on the hard disk as seperate files. how do you achieve this with 1000 emails in Outlook 2002?
 
Config: NoSpamToday (SA) <-> Exchange Server 5.5 on WinNT4 -> Outlook.
