I use MIMEDefang/Sendmail with my SpamAssassin installations.  I've had 
great luck with it.  As another person mentioned, postfix is an easier 
place to start if you have never installed a mail server.  I've been 
working with sendmail for about 12 years now, so I'm familiar with its 
many nuances, and old habits are hard to die ;).

Keep in mind, though.  If you somehow start using MIMEDefang, MIMEDefang 
*WILL NOT* work with the CVS/Development version of SpamAssassin.  Well, 
that is at least not without some modifications.  If you are doing an 
out-of-the-box installation, I would highly suggest that you use stable 
versions of all of the programs you install.
