I simply wrote a script launched via cron. The steps are:

1. Move the spam mailbox (mbox in my case) to spam.old.
2. Create/chmod a replacement (empty) mbox.
3. Read the messages out of spam.old (via formail) for processing (i.e bayes training, reporting).


I just run this with whatever frequency seems to work best.

Someone had suggested that we use MimeDefang....?

It depends what you want to do with the old messages. I like to preserve spam in a more-or-less recoverable format for future bayes training, analysis, reporting and such.
