If the answer to the latter question is yes, then you cannot do what you want: Notes re-interprets mails into its own stupid format. You would sa-learn something that is _VERY_ different from what comes via SMTP on your postfix+spamassassin gateway.

If mails are accessed on the Domino server through the IMAP interface, then it can be done.

received on the ham and spam addresses on the SA host, because they were
relayd to a different server? What happens with additional headers added by
our Domino server?

No need of rewriting, just keep the message in its original form! Which is something Notes doesn't really let you do.
