Yes, but it's an amavis question, not a spamassassin one - SA only does
the scoring for amavis.  The subject line comes from the Spam Admin
notification template.  The default one is in one of the __DATA__
sections at the end of /usr/sbin/amavisd (look for the text "SPAM
ADMINISTRATOR NOTIFICATIONS").

Take the text of that template and put it in a separate file, modify
the subject line in it to be soemthing like this:

Subject: SPAM FROM[?%l|| LOCAL] [?%o|(?)|<%o>] TO %R

Uncomment $notify_spam_admin_templ in amavisd.conf and point it to the
new file, restart amavis, and that should be it :)
