Do you actually mean the command "spamassassin" or spamassassin in general (spamc/spamd)?
By default spamd logs to syslog. You'd actually have to do some work to get it
to _not_ log.
If you mean spamassassin and not spamd, then sorry, i do not know if this is possible.
