This is *highly* dependent on the sending MUA (and your MUA, when you
save/store the message). Most of the time, MUAs completely munge the
message and actually destroy crucial information (such as Received:
headers), if you just hit "Forward".
Another poster was correct about sending the message as an attachment.
Depending on the MUA, you can sometimes force this manually for a single
message. Many MUAs, however, will forward as an attachment any time you
select and forward more than one message in a single email. When you get
the message with the attachment, you'll have to pull the attachment out
and save it (either *straight* to disk, or straight into a mail folder,
without adding any information. This, too, is dependent on your MUA).

Yes, SpamAssassin needs to have the original message with headers in
tact in order to learn. Otherwise, you're learning from headers and
sender/recipient information that was added by you, your boss, and your
network, which will probably do more harm than good.
Fortunately, there is a way to test the results. Take one of the saved
messages, and run it through:
# spamassassin -d < testmessage
In the output, you should see only the original spam message, without
any SpamAssassin markup, and without any junk added by your local
MUA(s). If all is well, it should be safe feeding similar messages to
sa-learn.
