As long as one of your Macs is syncing its iCal Birthdays calendar to a Google calendar and the other Mac has its own iCal Birthdays calendar enabled, you'll see birthdays in all three places. Of course if you don't want to see them in Google, just don't set up a calendar for them. I'm not sure if that answers your question though. Maybe I should do a quick screencast once SS3 is in beta.
