When Spanning Sync finds an unstructured name in Google Contacts (that
is, a contact with just a full name, and no distinct first name, last
name, etc fields), we'll parse it as a last name. However, if the
contact record in Google has structured information, we'll do the
right thing with it. Happily, it looks like Google Sync for iPhone
uses the structured data fields available in the Contacts API.

So both Spanning Sync and Google Sync for iPhone will keep your
structured names structured.

The bad news is that the Gmail/Google Contacts web UI does NOT yet
support structured names, so if you create or edit a contact using
that UI, the structure will be lost, leaving apps like Spanning Sync
to guess at the proper structure.

We're very optimistic the Google Contacts team will get their app up
to speed with the Contacts API soon. In the mean time, it's best to
use it read only if structured names (and postal addresses) are
important to you.

Cheers,
Charlie
