I remember being told that the UUIDs were created from a combination

things like time, machine name and other configurable parameters such

address. I doubt if you can do much about changing the way they are
created.
It seems that ColdFusion 5.0 no longer creates UUIDs in this fashion.
Sequential UUIDs normally don't look remotely similar.
