If your writer doesn't inherit from the latex writer, it will not have
the necessary visitor functions set when the math extension is set up.
You need to either write a visit_math/depart_math yourself, or inherit
from the LaTeX writer.

I could imagine using xelatex as an option.  I think xelatex is still
not present widely enough to make it the default.  If you could patch
the latex builder so that it can (via a conf.py option) use xelatex,
that would be fine.
