How to do that depends on what exactly you mean by "use Sphinx from within an IDE". If you mean editing reStructuredText sources, this is possible, although there doesn't seem to be syntax highlighting for reST (at least in 3.1.8, which is the version I tried here; I'm not a Wing user myself).
