This is not exactly a new project using Sphinx, but I wanted to mention that I have been using Sphinx for course material delivery in college classes. I think Sphinx has a great deal of value to education as instructional technology. I just wrote and presented a conference paper about it. The title of the paper is "Dumping PowerPoint in Favor of Web Sites".
