AFAIK there is no standard location to include a copyright note in the
pdf/latex output.

I often include a copyright line at the beginning of the text.

You can put this definition in your conf.py:

rst_epilog += '.. |copyright| replace:: %s' % copyright

and use the shortcut |copyright| somewhere in the text.

Maybe there is a better way to use the variable in the text.
