The shock adjustment will have no affect on ride height.
SPAX makes an adjustable perch front shock, but unfortunately, the adjustments are all

I put a set of the ride and height adjustable Spax's on my 72 frame along with 
(beefier than Spit) Herald front springs (ala B.Schwartz) to handle the extra weight 
of a V6 engine. The bottom of the shocks has a collar that you can adjust up and down 
by spinning the collar as it rides on a thread at the bottom of the shock. A second 
threaded ring is used to lock the collar in place. I can't attest to the height as 
there is no engine/body on the frame just yet. My collar is fully near the bottom to 
lower as much as possible. I don't know if you could adjust these shocks with them 
installed. A dangerous job - use the right tools to compress those springs.
