Sorry for the slow reply.  Just to follow up, this does now work in the latest 
version. Just use

 --sink=1 (where 1 is the number of the sink particle you want to centre on)

or

--origin=3427 (to centre on a regular particle)

There is also a similar flag, --track=3427 to have limits follow a particular 
particle (which does not recenter the coordinates).
Finally you can also use the following to always centre on the maximum density 
particle:

--origin=maxdens

For example you can make the plot you requested from the command line using:

splash -r density -vec v --origin=3427
