Our thermostats begin to open at about 190 and are fully open about 212. If 
you leave out the thermostat totally, most likely it will run cold. If the 
engine does not warm up sufficiently it will stay in open loop, running at 
approx 12.7:1 instead of 14.7:1 A/F ratio. Not only will you use much more 
fuel this way, but it wil be tantamount to driving the car very short 
distances all the time, causing more wear on the moving parts and not 
eliminating condensation properly in the oil. A better choise would be to 
wire in a manual fan switch for the cooling fan. Depending on your year car, 
the fan cycles on at 226/221 and off at approx 179. Chris

I know that you can install thermostats with different temp rating, but what
would happen if the thermostat was removed completely.
