Well you wouldn't want to drill completely through the plug, only enough to 
insert the sensor from the outside. It doesn't need to contact the oil to 
work. This is how the one in the WRX is set up, here is a pic of what it

In this unit the sensor part is free to turn in the plug so it can be 
removed for oil changes without disconnecting the wire. You probably would 
not be able to duplicate this so the sensor wire would have to be unplugged 
to remove the drain plug, no big deal. The important part would be securing 
the sensor in the plug, maybe with a high-temp epoxy.
