I have reviewed a couple of these in my jurisdiction.  There are a couple of 
issues that you will need to resolve before you can make a determination of 
system requirements.  First is the distilling process itself coming off the 
still is a highly flammable liquid, that will then be cut to a less flammable 
liquid.  The first part is a Class IB FCL which requires at least a 0.45 
gmm/sqft density.  Once cut, it will then depend on how much it is cut, alcohol 
content ranging from 60% to about 25% is a Class IC FCL, 25% to about 8% is a 
Class II, and the rest is Class IIIA.  Next will be the storage process.  NFPA 
30 will give guidance, once they give you the storage amount and configuration. 
 All my projects distilled a small amount at a restaurant so storage was not an 
issue.  I will be getting on of the larger storage buildings soon at the 
Dogfish Head Brewery in DE.

I need some assistance with a Distillery project. I am working with an 
Architect on this project and the Owner is anxious and is requesting cost 
estimates for the Fire Protection Sprinkler system.
I have indicated that the owner needs to hire an insurance to underwrite and 
specify the sprinkler system requirements.

The project is roughly 33,000 SF., to include Distillery, Indoor storage of 
Spirits in wood barrels, Processing Facility, Mercantile space, Event and 
Office spaces.
The Good news is that there is a great public water supply available on site. 
Fire Pump and onsite water storage should not be required.

At this time the Owner would like to get a Square foot price (budget estimate) 
on the sprinkler system. Can any one assist?
