here are my thoughts for whatever they're worth.

 * Based on your description I speculate that 8.15.1.5 does not apply
   because the space is concealead, rather than localized exposed.
 * If the AHJ would consider the CLT as the equivalent of "wood joist
   construction" then the more applicable section would appear to be
   8.15.1.6, and the use of sprinklers which are listed for such use
   would be appropriate.
 * Standard spray sprinklers would raise the issue of the discharge
   pattern not being fully developed as a clearance of 18" below the
   deflector is required, and it doesn't appear that is present in what
   you've described.  See §8.5.5.1 and Figure A.8.5.5.1.

So I would recommend something similar to the Reliable KFR-CCS (or from another manufacturer), as it is listed for the protection of such spaces, where the depth is 36" or less.  From the data sheet published by Reliable the maximum coverage areas are either 196 ft² for 256 ft² for spaces less or more than 18" deep, respectively.
