Kinda depends. I've been involved in projects that have handled it different ways.
If all structure is noncombustible, and the owner agrees there will be no storage of any kind, and the AHJ trusts the owner to abide by that (now and potentially forever), and the AHJ is otherwise on-board, then the pendent sprinklers have been left in their original locations. As further TI is done, that section of the system is brought up to standard. But most of the projects like this that I've been involved with have required the entire system be brought up to standard before any occupancy occurs. If this is the case, look to see if the roof structure has steel beams or other deep obstructions that may require adding a line of sprinklers to one side or the other. Start by calling your AHJ.
