A greek toolbar would have way too much buttons. I'd prefer a widget to insert special characters, including greek ones. This should be easilly doable as a plugin. Some characters are considered "operators" rather than characters so these should not be included.

Convert from latin to greek with a shortcut is a great idea ! I personally tend to avoid 1-letter variable names but I see how it could be useful.
