you can give it a shoot with --charset=gbk

if that fails, there are number of things that could go wrong:

1) is your editor supporting chinese characters?
2) are you sure that the backend charset/collation is GBK? in case
that the used DBMS connector sets collation to UTF8 and/or Latin1
there could be some problems with automatic conversions
3) which technique are you using?
