The distros build around LMS (Vortexbox, Daphile) usually include all kinds of stuff, like SW players or clever ripping programs, but my experience from Vortexbox is that it feels a bit "monolithic" and I do believe they work best when running on "bare metal". As long as it's just LMS you want and none of the other stuff I'm not sure it's the most practical solution. For running LMS in a VM I'd stick with something vanilla and just make a minimal install. LMS is available as Debian or RedHat packages, picking a distro that stays true to it's heritage in either of those camps should make installation and maintenance easier. CentOS and Debian have been mentioned in this thread, both seem like excellent candidates, or why not Ubuntu LTS. No need to be at the bleeding edge.
