I've been doing battle suddenly with plugin(s) that seem to be causing
excessive CPU usage, but I don't know exactly which one, and in any case
I'd like to have data for the developer if it can be narrowed down.

Disable half of the installed plugins.

Fixed? Re-enable half of the disabled plugins.
Not fixed? Disable half of the remaining enabled plugins.

Repeat until you're back to normal. Re-enable everything but the suspect.

I've attempted a bunch of trial & error - removal and install in
different order, etc.  Problem is, it doesn't happen immediately - it
kind of builds.

Unfortunately this is the only way to go.

Or almost: if you're really into it, then you could install NYTProf and run LMS with it. There's some hotkey or something defined somewhere to enable/disable profiling. This would allow you to enable profiling as soon as problems arise. The resulting data _might_ help you. But then NYTProf is not suitable to be enabled all the time. It generates a lot of data and slows down LMS.

Disabling plugins might be much easier, even if it takes more time.
