Are you by any chance all using the same MySB credentials - I had 2 x Pi LMS running for a while with different libraries but the same MySB user and ran into problems with failing menus and the like and players jumping across different LMS servers despite declaring 127.0.0.1 as the Server IP on each separate piCorePlayer/LMS instance.
It is preferable to run on different subnets if you can but that will depend on the router / network capability.
