remove or replace in -server.prefs-? When I compare the new
-server.prefs- to the old one, I find two entries containing the text
"server_uuid": *_ts_server_uuid* and *server_uuid*. Should I delete
these entries in old -server.prefs- or replace them with the values from
the newer -server.prefs- before copying it (and the plugin folder) to
the new HDD?

Remove these values from the server.prefs you copied from old to new. Leave the old alone.

And what does "get rid of all paths" mean? Just deleting all entries
that contain a path or changing these entries so that the paths point to
the new locations?

There are settings pointing to eg. music file locations. They might have changed on the new system. Make sure you set everything up to work in the new environment.
