First, I did make a full backup of the folders.
Then I stopped my original LMS docker instance and installed your image
pointing to the same original folder locations for /config
So, since my old LMS had all the permissions it needed, shouldn't I
assume that these would be sufficient for the new LMS as well?

My state folder has the following sub  folders:

Then I simply restarted my old LMS instance, and it runs just fine. So
obviously, my attempt to run your LMS image haven't made any changes to
any config files.
At least not causing any notisable problems for my old instance. So I
didn't have to restore the backup.

I will try that too (but I don't see why that would help as long as it
cannot find these files)
