first restart of the server (triggered via the Plugins tab). Apparently
when LMS restarts itself, all "non-supported" plugins are deleted.
Previously, I could manually install such plugins by copying them into
cache/InstalledPlugins/Plugins. That still works, until I let the server
restart itself (the plugins stay safe when I restart the whole container
via Docker).

I always say NOT to mess with the InstalledPlugins folder. Its content is managed by LMS extension manager. And it has been for ages. If it worked before, then you were lucky.

Check Settings/Information for other candidates. See where there's a Plugins folder (not Plugin, and not InstalledPlugins).
