Okay, I've granted full disk access to perl and bash. Now the issue is partially fixed: when I restart Mac os Big sur with LMS autostart, the issue is still there, no music folder access, but if I restart the server after a while LMS works correctly...
Please note that the "start at boot time" option must have been broken for quite a while. Change it to "start at sign-in" instead. At least this way you won't have to start it manually.
